Gingerbread Pancakes (vegan & gluten-free)

These delicious pancakes are both completely vegan, as well as gluten-free, and combine a warm spiciness with a dark sweetness. Bringing a toasty feeling of Christmas, they are the perfect way to start your day!

  • Blender
  • Pancake pan
  • Silicon spatula
  • Basting brush


  • 250 ml almond milk (cashew milk also works well)
  • 100 g apple sauce
  • 100 g gluten-free oat flour
  • 50 g almond flour
  • 56 g medjool dates (about 3 medium dates)
  • 1/2 tbsp molasses
  • 3/4 tsp ginger powder
  • 1/2 tsp cinnamon powder
  • 1/4 tsp allspice
  • 1 tsp avocado oil (for cooking)


  • Place all the ingredients into a blender and blend until smooth batter is formed.
  • Put the pancake pan on a medium to low heat and brush each pancake mould with a little avocado oil.
  • Once the oil is hot, add a 1/4 cup of batter to each pancake mould and cook for a few minutes until the pancake starts to firm up and bubble.
  • When the pancake is firm enough, flip it over and cook for a few more minutes until fully cooked. Repeat the turning as needed so that the pancake cooks fully on both sides. If it starts to burn, turn down the heat a little.
  • For kids: use a gingerbread man cutter to make gingerbread shapes and decorate using strawberry and vegan white chocolate. Serve with banana snowmen!
  • For adults: serve the pancakes with maple syrup, vegan butter/cream, and/or vegan yoghurt and enjoy!
