Gingerbread Snowmen (No-bake Vegan & GF)


Gingerbread Snowmen

This awesome gingerbread Christmassy recipe can make 6 cool snowmen or about 20 regular energy balls. You won't be disappointed by this warm sweet mixture of spices and molasses over the festive season!

  • Food processor


  • 200 g medjool dates
  • 100 g pecans
  • 100 g gluten free oat flour can also use GF oats instead
  • 1 tbsp molasses
  • 3/4 tsp ginger powder
  • 1/2 tsp cinnamon
  • 1/4 tsp allspice
  • 1/4 tsp salt


  • Place all the ingredients into the food processor and blend for a few minutes until it forms a sticky mixture.
  • For each gingerbread snowman arrangement: Roll them into 3 tablespoon-sized balls and place them on top of each other with the smallest ball as the snowman's head. Sprinkle some icing sugar on top of the snowman and around the plate. Roll 3 thin strips for arms & mouth, and cut a tiny piece of carrot for the nose. For the hat, roll a small portion and flatten the bottom bit. Poke some eyes and buttons using a chopstick or toothpick.
  • If making regular energy balls: Scoop out a tablespoon-sized mixture and slowly roll into a ball using the palms of your hands. Repeat until all the mixture is used up.
  • Enjoy them on their own, or with a nice mug of hot chocolate!
