Reindeer Cookie Dough Balls (Vegan & Gluten-Free)

These quick and easy plant-based energy balls will delight your little (and big) ones over the festive period and beyond. Can be enjoyed as a healthy snack for breakfast, dessert or throughout the day!

Ingredients

  • 220 g medjool dates
  • 275 g gluten-free oat flour
  • 60 g tahini
  • 65 ml maple syrup
  • 1/2 tsp salt
  • 1/4 tsp vanilla powder
  • 20 gluten-free pretzels
  • 20 dried cranberries
  • 20 pieces puffed rice

Instructions

  • Place the pitted dates, oat flour, tahini, maple syrup, salt and vanilla powder and blend them until they form into a sticky dough.
  • Take around a tablespoon-sized scoop out and roll in your hands to form a ball. Repeat this step until you use all of the dough.
  • Next break the pretzels to form antler-sized pieces and stick them into the top of the balls. Press two pieces of puffed rice into the balls to form the eyes, and then add a dried cranberry to make the nose.
  • Serve and enjoy for breakfast, dessert or a healthy plant-based snack throughout the day!
