Vegan Christmas Pudding

Our amazing Christmas pudding recipe is fruity, moist and filled with all the delicious flavours of Christmas past, present and future. This ultimate festive dessert will be sure to wow both your vegan and non-vegan guests this Christmas!

  • Slow cooker or large saucepan (5 litre +)

Ingredients

  • 600 g vegan mincemeat from vegan mince pie recipe
  • 25 g coconut sugar
  • 50 g pecans chopped
  • 115 g vegan butter
  • 45 g gluten free breadcrumbs
  • 95 g gluten free flour
  • 1/2 tsp baking powder

Instructions

  • If you haven't already got a batch of our vegan mincemeat made up from our mince pie recipe, be sure to check this out the day before and soak all the ingredients overnight for at least 12 hours.
    600 g vegan mincemeat
  • Then the next day, grease a large (approx. 1 litre) heatproof pudding bowl with some vegan butter, and line the base of the bowl with a circle of greaseproof paper to ensure the pudding comes out okay once it's cooked.
  • Place the vegan mincemeat into a large mixing bowl and stir in the coconut sugar, chopped pecans, vegan butter and GF breadcrumbs. Make sure to combine all the ingredients well. Then sift in the flour and baking powder and slowly fold into the mixture.
  • Next, spoon the mixture into the pudding bowl, leaving a 2-3cm gap at the top. Cover the mixture with some more greaseproof paper, then add a sheet of tinfoil over the top of the bowl and tie it tightly with some cook's string.
  • Finally, place an upturned ramekin in the bottom of the slow cooker or saucepan, and sit the pudding bowl on top. Pour some boiling water inside the cooker/saucepan until it reached about half way up the pudding bowl. Cover and simmer on a low heat for around 5 hours, making sure to top up the water whenever necessary. Lift the pudding out and leave it to cool slightly before removing the foil to avoid any steam burns on your skin.

Notes

Best enjoyed hot, served with some coconut custard!
Storage: this delicious pudding can be made in advance and stored for up to month.
Re-heating: place the pudding back in the slow cooker or saucepan, and steam the same way for about 30 minutes.
