Vegan Hummus Shakshuka

Ingredients

Shakshuka

  • 2 tbsp olive oil
  • 800 g crushed tomatoes 2 x tins or fresh
  • 1 yellow or red pepper chopped
  • 1 red onion (small) diced
  • 4 cloves garlic diced
  • 2 tbsp tomato puree
  • 4 tsp shakshuka spice mix
  • 2 tsp smoked paprika
  • 1 can chickpeas
  • 50 g green olives chopped
  • 1 tbsp tahini
  • 1 tbsp fresh coriander
  • salt and pepper to taste

Creamy Hummus

  • 1 can chickpeas
  • 2 tbsp tahini
  • 1/2 lemon juiced
  • 1 clove garlic
  • 2 tbsp extra virgin olive oil
  • 1 tsp cumin powder
  • 1/2 tsp salt
  • 2 tbsp water

Instructions

  • To make the hummus, add all the ingredients into a food processor and blend on high until smooth and creamy (at least 4-5 minutes). Note: if time permits, removing the skins from the chickpeas will give a creamier hummus.
  • For the shakshuka, firstly heat the olive oil over a medium heat and then add the onion and a pinch of salt. Fry for 3-4 minutes until softened. Add the garlic and continue to fry for a further 1-2 minutes.
  • Next add the pepper and fry for an additional 3-4 minutes until the pepper softens. After that, add all the spices and cook for 1-2 minutes more.
  • Throw in the tomato paste and chickpeas and mix well to coat all the ingredients. Pour in the tomatoes and bring to a simmer on a medium heat. Season to taste.
  • Reduce the heat slightly, add in the olives and continue to simmer for about 10 to 15 minutes until the sauce thickens. Once the desired consistency is reached, stir in the tahini and remove from the heat.
  • Add 3 large dollops of hummus, a sprinkling of coriander and serve with some delicious homemade bread!
